Ingredients

  • Lemon Filling:
  • 1 9" crust
  • 7.1 oz sugar
  • 2 T AP
  • 3 T Corn Starch
  • 1/4 t S
  • 10 fl oz water
  • 3 lemons-juiced-zested
  • 2 T butter
  • 4 EY-lighlty beaten
  • Meringue:
  • 4 EW- room temp
  • 2.7 oz sugar

Preparation

Step 1

1. Prep filling: in saucepan whisk: sugar, ap, cs, and salt. whisk in water, LJ, LZ, buter and EY
2. whisk over med heat until boiling, boil 1 full minute and remove
3. immediately pour into baked crust, chill for 30 minutes
4. clean mixer with vinegar, whip EW until foamy, slowly add in Sugar, whip until stiff
5. Pipe meringue onto lemon, sealing off edges
6. Bake until meringue browns
