Milk Chocolate Forentine Cookies

Ingredients

  • 2/3 c butter
  • 2 c quick oats, uncooked
  • 1 c sugar
  • 2/3 c flour
  • 1/4 c corn syrup
  • 1/4 c milk
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 2 c (11 1/2 oz) milk chocolate chips

Preparation

Step 1

In medium saucepan, melt butter; remove from heat. Stir in oats, sugar, flour, corn syrup, milk, vanilla, and salt; mix well. Drop by level teaspoonsfuls, about 3 inches apart, onto foil lined baking sheets. With rubber spatula, spread thinly. Bake in preheated 375 degree oven for 6 to 8 minutes, until golden brown; cool. Peel foil from cookies. Over hot (not boiling) water, melt morsels, stirring until smooth. Spread thin layer of melted chocolate on flat side of half the cookies. Top with remaining cookies.
