Buffalo Popcorn Chicken Bites

Ingredients

  • 6 cups vegie oil for fryer
  • 2 1/2 cups Bisquick pancake mix
  • 8 teaspoons hot sauce
  • 1 1/4 pound chicken tenders or skinless boneless breasts, cut into bite size pieces
  • 2 scallions - finely chopped
  • 1 cup blue cheese dressing
  • Celery sticks

Preparation

Step 1

1. Heat oil ( medium heat)
2. Combine 2 cups pancake mix, 1 1/4 cup water and 6 teaspoons hot sauce in a large bowl
3. Place the remaining 1/2 cup pancake mix in a WIDE bowl and arrange it near the stove
4. Toss chicken with the remaining hot sauce, toss into the dry pancake mix, coating evenly and shaking off any excess mix
5. With fingers or fork, coat the pieces with the wet pancake mix - small batches at a time
5. Add the coated chicken pieces to the hot oil - small batches at a time
6. 4 minutes in the oil - approximately - until golden brown - then transfer to paper towel to drain.
7. Season with salt while hot and draining
8. Stir scallions and 1 tsp of pepper into the blue cheese dressing and serve the chicken with celery stixs - immediately!!
