Lemon Poppyseed Cake

Ingredients

  • 1 1/2 cups flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 1/2 tbsp poppy seeds
  • 1/2 cup almonds, finely chopped
  • 3/4 cup dry sweetener
  • 3/4 cup soy milk
  • 2 tsp lemon extract
  • zest of 1 lemon
  • 1/4 cup olive oil
  • egg replacer, equal to 1 egg
  • 2 tbsp Amaretto (optional)

Preparation

Step 1

Prehat oven to 350F.

In a large bowl, stir together the flour, baking powder, salt, poppy seeds, and almonds. Add the sweetener, soy milk, lemon extract, zest, oil, egg replacer, and optional Amaretto and stir together gently until just mixed. Pour into a lightly oiled 8" cake pan and bake for 25-30 minutes or until a toothpick comes out clean.
