Salsa de Tomatillo y Pasilla

This is a pasilla chile salsa that is best served with pork, beef, lamb, goat, game-type meats (meats with a strong flavor)

Ingredients

  • 4 to 5 chiles pasilla
  • 1/3 cup white onion chopped
  • 1 garlic clove
  • 1/2 lb tomatillos
  • 1 to 1 1/2 cup beer
  • 1 Tbsp. lard or veg. oil
  • Salt to taste

Preparation

Step 1

1. De-seed and de-vein chiles and tear into chunks
2. Saute onion and garlic in lard
3. Add tomatillos
4. Add chiles and saute for no more than 30 seconds
5. Add beer
6. Bring to boil, then simmer for 20 minutes
7. Blend in blender and serve.
