Saucy Wild Rice w/ Zucchini

Ingredients

  • 3 med zucchini or squash (3 c)
  • 1/2 c mushrooms
  • 6 1/4 oz package quick-cooking long grain and wild rice mix
  • 1 can cream of mushroom soup
  • 1/2 c plain yogurt
  • 1 3/4 c water

Preparation

Step 1

In saucepan combine rice, water and veggies. Cook until rice is done. In another bowl stir together the soup and yogurt, stir into dish. Serve.
