Ingredients
- Your choice of boneless or bone-in Prime Rib.
- Seasonings to taste (salt, pepper, sage, etc)
Preparation
Step 1
Several days prior to cooking Prime Rib, season all sides of roast and place in cooking pan uncovered in the refrigerator to dry out (best 3-7 days).
Preheat oven to 500 degrees
Place Prime Rib in the preheated oven for the following times:
5 minutes per pound (RARE)
5 1/2 minutes per pound (MEDIUM RARE)
6 minutes per pound (MEDIUM)
*Example - 7 pound roast cooked to medium rare, 38 1/2 minute cooking time, then two hours sitting in the oven.
After the required amount of time, turn oven OFF, and leave Prime Rib in the over for 2 hours - WITHOUT OPENING THE DOOR!
Enjoy!
Serve with Au Jus, and favorite Horseradish sauce.
