Ingredients
- 2 pounds skinless, boneless, chicken strips, cut into strips
- 1 T. cornstarch
- 1/2 tsp. ground ginger
- 3 T. olive oil
- 1 bunch broccoli, florets only
- 1 T. minced garlic
- 3 T. low-sodium soy sauce
- 1/4 cup sherry
- 1 tsp. sugar
- 1 bunch green onions(scallions), cut into 2 inch slices(can use regular onion,sliced)
- 1 red bell pepper, seeded and cut into strips
Preparation
Step 1
In a large bowl, toss the chicken strips with the cornstarch, and ginger
In a large skillet, heat olive oil. Add the chicken, broccoli, garlic, soy sauce, sherry, and sugar, stirring and cooking over high heat, about 7 minutes.
Add the onions and red pepper and continue cooking and stirring for another 10 minutes, or until chicken is done.
Serve over rice.
