Lemon Cookies

Ingredients

  • 3/4 Cup Butter
  • 1 1/2 Cup Sugar
  • 2 Eggs, well beaten
  • 6 Tbs. Lemon Juice
  • 1 Lemon Rind, grated
  • 3 Cups Flour
  • 1 tsp. Baking Powder
  • 1/4 tsp. Soda
  • 1/2 tsp. Salt

Preparation

Step 1

Cream butter and sugar. Add eggs, lemon juice, and rind. Combine dry ingredients and add to first mixture. Mix thoroughly. Turn onto a lightly floured board. Roll 1/8 to 1/4 inch thick. Cut with cookie cutter. Place on lightly greased baking sheet. Bake at 375 degrees approximately 8 minutes. Ice if desired.
