Ingredients
- 2 Lbs (7-8 medium) fresh tomatoes, coarsely chopped
- 2 Tbsp olive oil
- 1 1/2 Tsp salt
- 1 1/2 Tsp sugar
- 1 Tsp ground black pepper
- 3-4 Tbsp balsamic vinegar
- 8 oz Dried pasta of choice
Preparation
Step 1
In a food processor or blender, combine and process all ingredients except pasta, to make a rough textured sauce
Cook pasta according to directions, drain.
Return pasta to pot and add sauce
Toss together over low heat about a minute
Serve with grated parmesan cheese
