Avocado Pesto Pasta

Ingredients

  • 1 box (12oz.) whole wheat spaghetti
  • 3/4 - 1 C pesto
  • 2 avocados, halved & pitted
  • juice of 1/2 lemon
  • 2 tomatoes, sliced

Preparation

Step 1

Bring a large pot of salted water to a boil. Add spaghetti & cook until al dente. Drain, reserving 1/2 C of the cooking liquid.

Put pesto in a large bowl. Scoop avocado flesh into bowl & mash avocado & lemon juice into pesto.

Toss spaghetti with pesto, adding some of the reserved cooking liquid if necessary to give it the desired consistency.

Serve spaghetti with sliced tomatoes.
