Ingredients
- 1 t kosher salt
- 2 t ground black pepper
- Vegetable oil, for coating pans
- 2.5 lbs turkey wings
- 1 lb (8 small heads) baby bok choy, halved lengthwise
- 1 lg yellow bell pepper, cut lengthwise into 1/3"-wide strips
Preparation
Step 1
1. Preheat oven to 450F. Arrange racks @ upper & lower thirds of oven.
2. In a small bowl, combine salt & pepper.
3. Lightly coat 2 large, rimmed baking sheets w/oil. Spread 1/2 the wings on each baking sheet & sprinkle w/salt & pepper.
4. Roast wings on top & bottom oven racks until browned & crisp, ~30 min, switching the pans halfway through.
5. Remove pans from oven & add bok choy, cut sides down, & bell pepper.
6. Return to oven & roast until vegetables start to brown, 5-7 min.
7. Remove from oven & serve.
