Twice Baked Parmesan Potatoes

Ingredients

  • 8 russet potatoes, scrubbed
  • 2-3 Tbsp. vegetable oil
  • 1 packet Parmesan Peppercorn Warm Dip Mix »

  • 8 oz. cream cheese
  • 1/2 cup milk
  • 1/2 cup butter (1 stick), diced
  • 1/2 cup real bacon bits
  • 1 cup mozzarella cheese plus additional for garnish

Preparation

Step 1

Preheat oven to 400°. Using a paper towel, rub the outside of potatoes with vegetable oil. Place on a baking sheet and bake 45 minutes. Using a clean towel or potholder, carefully hold each warm potato and cut in half lengthwise. Scrape out the insides with a spoon, and place in a large mixing bowl; mash in all remaining ingredients. Spoon mixture into potato shells, and return to baking sheet. Garnish with additional shredded cheese if desired. Bake 10 minutes or until hot.
