Mexican Wedding Cookies

Ingredients

  • 1 cup (2 sticks) butter, softened
  • 1 cup powdered sugar, divided
  • 1 tsp. vanilla
  • 2 cups flour
  • 1 cup finely chopped pecans

Preparation

Step 1

Preheat oven at 350 degrees. Mix softened butter, 1/2 cup powdered sugar and vanilla in large bowl until light and fluffy. Gradually add flour and pecans mixing until well blended.

Shape dough into 1 inch balls. Place 1 1/2 inches apart on ungreased baking sheet.

Bake 15 minutes or until botton of cookies are lightly brown. Cool 5 minutes on cooling rack. Roll warm cookies in remaining 1/2 cup powdered sugar until completely coated. Continue to cool on rack. Store in tightly covered container at room temperature.
