Skinny Macaroni Salad

Ingredients

  • 1 cup peeled & chopped tomatoes
  • 2 tsp. balsamic vinegar
  • 1/4 cup minced red onion
  • 2 tsp. olive oil
  • 2 Tbl. minced fresh basil
  • 1/8 tsp. ground black pepper
  • 2 cloves garlic, minced
  • 2 cups cooked penne or elbow pasta

Preparation

Step 1

Combine all ingredients except pasta in glass bowl. Cover & let stand at room temperature for 1 hour. Just before serving fold in the pasta.
