Potato Salad

Ingredients

  • 5 lbs. red potatoes
  • 2 cups mayo
  • 5 eggs
  • 2 tsp salt
  • 2 stalks celery, chopped
  • 1 tsp mustard
  • 1 tsp paprika
  • salt and pepper to taste

Preparation

Step 1

In a pot, boil eggs for approx. 15 min. Let eggs stand until cool. Peel and chop.

In a large pot of water, boil potatoes. Add 2 tsp ot salt to water. Cook potatoes until tender. Drain and let stand. When cool, peel potatoes and cut in to cubes.

In a bowl, mix potatoes, eggs, celery, mayo, paprika, salt and pepper. Mix well and refrigerate for about an hour before serving.
