Tomato Pie

Ingredients

  • 6 fresh tomatoes, peeled, drained and seeded
  • 2 cloves of garlic
  • 2 tbls garlic chopped
  • 2 tbls fresh thyme
  • 1 cup shredded cheddar
  • 1/2 cup mayo
  • salt & pepper to taste
  • 1/2 cup Ritz crackers crumbled

Preparation

Step 1

preheat oven 350 F.
arrange tomatoes and garlic in a single layer on a baking sheet & drizzle with oil and sprinkle with thyme. roast until slightly shriveled and starting to brown around the edges about 15 mins. remove from oven and cool in pan.
in a medium bowl combine mayo, cheddar, salt and pepper. set aside.
mix 1/2 the cracker crumbs with a little melted butter and mash into the bottom of the pie plate
layer tomatoes in pie plate, spread cheese mixture over tomatoes.
sprinkle with the remaining crackers and bake until cheese is bubbly and top is browned about 20 mins
garnish with a sprig of thyme.
