Autumn Squash Casserole

Ingredients

  • 3 lbs buttercup squash-peeled, seeded and cut into 3/4 inch chunks
  • 1/4 cup butter
  • 1 Tbl salt
  • dash white pepper
  • 1 1/2 cup white sugar
  • 1/2 cup chopped pecans
  • 1/2 cup brown sugar
  • 2 Tbls melted butter

Preparation

Step 1

Preheat oven to 350.
Place squash pieces in saucepan and cover with water. Bring to a boil and cook until squash is tender, about 15 minutes. Drain. Then mash the squash with 1/4 cup butter, 1 Tbl brown sugar, and white pepper.
Spoon into casserole dish.
Stir together the cornflakes, pecans, 1/2 cup brown sugar, and melted butter. Sprinkle evenly over squash.
Bake 15 minutes.
