Honey Lime Tilapia

Ingredients

  • 1/4 C honey
  • 3 Tbsp lime juice
  • 2 cloves garlic, minced
  • 1 Lb Tilapia fillets
  • salt and pepper to taste
  • 1 butternut squash, peeled, seeded & sliced
  • 1 bunch fresh asparagus, trimmed and chopped
  • poultry seasoning
  • 1/2 C mozzarella cheese, grated

Preparation

Step 1

In a large bowl, mix honey, lime juice, and garlic. Season tilapia with salt and pepper, place in the bowl, marinate 1 hour in the refrigerator.

Preheat oven to 350F. Lightly grease a medium baking pan.

Arrange squash and asparagus in the baking dish. Place tilapia on top of vegetables and season with poultry seasoning. Discard remaining marinade.

Bake 20 minutes or umtil vegetables are tneder and fish is easily flaked. Sprinkle with mozzarello, and continue baking for 5 minutes or until cheese is lightly brown.
