Cherry Gelatin Salad

Ingredients

  • 1 can (15oz) pitted dark sweet cherries
  • 3 oz cherry gelatin
  • 1 c cold water
  • 1 T lemon juice
  • 2 medium bananas, sliced
  • 1/4 c chopped pecans

Preparation

Step 1

Drain cherries, reserving liquid in a 1 c measuring cup. Add enough water to measure the whole cup. In a small saucepan, bring mix to a boil. Remove from the heat and stir in gelatin until well dissolved. Stir in cold water and lemon juice.

Cover and refrigerate until syrupy, about 40 min. Fold in the bananas, cherries, and pecans. Transfer to a 6 cup mold coated with cooking spray. Refrigerate until firm. Unmold onto a serving platter and garnish with more pecans if desired.
