BEEF (PULLED BEEF SANDWICHES)

Step 1

In slow cooker set on low, add a 3-4 lb beef chuck roast that was been cut into quarters that has been ribbed with salt and pepper. Then add 1 c beef broth. Top with 3 bell peppers that have been seeded and cut into 6 wedges, 2 medium onion peeled and cut into 6 wedges. Then cook on low 8 hours until very tender. When ready to serve, arrange oven rack 5-6 inches from broiler and preheat on high. Transfer beef to large cutting board and shred removing fat. Strain vegetables. Divide meat and vegetables among 8 long sandwich rolls an dtop with picked jalapeno slices and thin slices provolone cheese. Broil 2-3 minutes or until melted.
