Ricotta And Cherry Claffouti

  • 4 eggs
  • 5 tablespoon sugar
  • 3/4 cup milk
  • 1/8 teaspoon salt
  • 7 ounces ricotta
  • butter for brushing
  • 40 cherries, pitted
  • confectioners' sugar

Preparation

Step 1

Preheat the oven to 350°.

In a food processor, combine the eggs, sugar, milk and salt. Add the ricotta and process until a smooth batter forms.

Lightly brush 4 individual oven-safe baking dishes with butter. Arrange 10 cherries in the bottom of each baking dish. Divide the ricotta mixture evenly among the 4 baking dishes. Gently shake each of the dishes to even out the surface of the batter.

Arrange the claffoutis on a baking sheet and transfer to the oven to bake for about 15 minutes, or until golden and set. Remove the claffoutis from the oven, dust with the confectioners' sugar and serve warm.
