Chicken (Tuna) & Broccolli Enchilados

Ingredients

  • 1 can cream of mushroom soup
  • 1 cup milk
  • 1 can tuna (drained) or 3 chicken breasts (cooked & deponed)
  • 1 pkg frozen broccolli spears thawed, drained, & cut into 1 inch pieces
  • 1 cup shredded cheddar or monteray jack cheese
  • 1 can durkie french fried onion rings
  • 6 small flour tortillas

Preparation

Step 1

Combine soup & milk, set aside
Combine meat, brocolli, 1/2 cup cheese, & 1/2 can onion rings
Divide meat evenly on tortillas & roll
Place tortillas, open side down, in lightly greased baking dish
Pour remaining soup mixture over tortillas, cover with foil & bake for 35 mins. at 350 degrees
Remove foil, cover with remaining cheese and onion rings and bake 5 mins. more.
