Baked Eggplant Italiano

Ingredients

  • 2 Eggplant (halved)
  • 1/2 Cup pasta Sauce
  • 1/4 Cup Mozzerela Cheese

Preparation

Step 1

1-Preheat oven to 375f
2-Cut eggplant in half longways
3-Lightly coat meat of eggplant with evoo
4-Bake until golden brown and very very tender (30 minutes?)
5- While eggplant is baking warm pasta sauce
6- When eggplant is done, scoop into serving dish and mash with fork
7- add pasta sauce and mix thoroughly
8- Plate and top with cheese (should melt but microwave is ok)
