Shrimp, Avocado & Grapefruit Salad

Ingredients

  • 2 1/2 T olive oil, divided
  • 12 oz. shrimp
  • 1/2 t salt
  • 1/4 t pepper
  • 1 grapefruit
  • 2 T chopped tarragon
  • 2 t brown sugar
  • 1 t chopped shallots
  • 6 C chopped roamine lettuce
  • 1 avocado, cut into wedges

Preparation

Step 1

Heat 1 1/2t olive oil in pan; swirl to coat. Sprinkle shrimp with salt & pepper. Add to pan; cook 3 min, stirring frequently. Remove from pan & keep warm.
Peel & section grapefruit over bowl, reserving 3 T juice. Combine grapefruit juice, remaining 2 T olive oil, salt & pepper, tarragon, brown sugar & shallots in large bowl, stirring well. Add lettuce; toss. Top with avocado, shrimp & grapefruit.
