Ricotta Spinach Stuffed Chx Breast

Ingredients

  • 4 pcs. chicken
  • 15 oz. ricotta
  • 10 oz. spinach, drained
  • garlic to taste
  • 2 eggs
  • 8 oz. shredded mozzarella
  • 14 oz. spaghetti sauce

Preparation

Step 1

Season chicken breasts with s&p to taste. Slit open sides for stuffing. In med. bowl, combine ricotta, spinach, garlic, egg, and 3/4 cheese.

Mix and stuff each breast w/ 1/4 of the mixture. Secure with toothpicks ( I didn't and they still turned out fine ). Place a small amount of sauce on bottom of 9x13 pan, then chicken breasts, then remaining sauce.

Bake @350 for 45-60 mins. or till chicken is cooked through.
