Braised beets

Ingredients

  • 1 lb beets, chopped into 1 inch cubes
  • 2 Tbsps butter
  • 1/2 cup vegetable stock or enough to cover beets in pot
  • Splash of white wine
  • Freshly chopped tarragon

Preparation

Step 1

In a large saucepan, combine all ingredients. Bring to a boil. Cover and adjust the heat so the mixture simmers. Cook until the vegetables are tender 15-20 minutes. Add salt and pepper to taste, and serve.
