Ingredients
- 2 1/2 pounds fresh asparagus, trimmed
- 1/2 cup rice wine vinegar
- 2 cloves garlic, minced
- 1 T sugar
- 1 tsp. crushed red pepper
- 3/4 cup olive oil
Preparation
Step 1
In a large skillet, cook asparagus in boil water to cover for 3 minutes or just until crisp-tender; drain. Plunge asparagus into ice water to stop the cooking process; drain. Place in a large heavy-duty resealable plastic bag.
In a bowl, whisk together vinegar, garlic, sugar and red pepper; gradually add oil, whisking until blended. Pour over asparagus in bag, and seal. Chill for 8 hours. Remove from marinade, discarding marinade, before serving.
