Cilantro Slaw with Avocado Cream

Very good slaw recipe to serve alongside tacos or tortillas to spice them up a little bit! Great flavor!

Ingredients
- Avocado Cream:
- 1/8 teaspoon lime zest
- 2 tablespoons fresh lime juice, divided
- 1/4 cup sour cream
- 2 tablespoons milk
- 1/2 ripe peeled avocado, diced
- Cilantro Slaw:
- 2 cups packaged angel hair slaw
- 1/2 cup thinly sliced green onions
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon canola oil
- 1/4 teaspoon salt
Preparation
Step 1
To make the Avocado Cream:
Combine the lime zest, 1 tablespoon of lime juice, sour cream, milk and avocado into a food processor or blender and process until smooth.
To make the Cilantro Slaw:
Combine the remaining 1 tablespoon of lime juice, slaw, onions, cilantro, oil and salt, tossing to coat.
To serve:
Top each tortilla with about 1 tablespoon avocado mixture and 1/4 cup of slaw mixture, along side any other fillings of your choice, chicken, steak, vegetables, beans, etc...
