Ingredients
- 3 ears of corn, shucked
- 2 tomatoes, peeled, seeded and chopped
- 1 small yelow onion, finely chopped
- 2 Tbs olive oil
- 1 Tbs red wine vinegar
- 1/2 Tsp salt
- 1/4 Tsp freshly ground pepper
- 1/4 Tsp Tabasco or other hot pepper sauce, or to taste
- 2 Tbsp finely chopped flat-leaf parsley
Preparation
Step 1
In a large bowl combine all ingredients, stir well, and adjust seasonings. Cover and refrigerate. Stir in parsley just before serving.
