Corn Salsa

Ingredients

  • 3 ears of corn, shucked
  • 2 tomatoes, peeled, seeded and chopped
  • 1 small yelow onion, finely chopped
  • 2 Tbs olive oil
  • 1 Tbs red wine vinegar
  • 1/2 Tsp salt
  • 1/4 Tsp freshly ground pepper
  • 1/4 Tsp Tabasco or other hot pepper sauce, or to taste
  • 2 Tbsp finely chopped flat-leaf parsley

Preparation

Step 1

In a large bowl combine all ingredients, stir well, and adjust seasonings. Cover and refrigerate. Stir in parsley just before serving.
