  • Mixed Citrus Green Salad
  • 1 cup red seedless grapes, halved
  • 1 5-oz. bags mixed salad greens
  • 1 11-oz. can mandarin oranges, drained
  • 1 8-oz. container pineapple chunks, drained
  • 1 8-oz. container red grapefruit, drained
  • 1 T. Orange-Poppy Seed Dressing
  • 21 walnut halves, toasted
  • Orange-Poppy Seed Dressing
  • 1/2 cup fresh orange juice
  • 1/4 cup honey
  • 1/4 cup canola oil
  • 2 T. champagne vinegar
  • 1/8 t. salt
  • 1 t. poppy seeds

Preparation

Step 1

Mixed Citrus Green Salad

Combine first 5 ingredients in a large bowl. Arrange 2 cups salad on each of 7 plates; drizzle with 1 T. Orange-Poppy Seed Dressing (reserve remaining dressing for another use). Top each serving with 3 walnut halves. Yield: 7 servings.

Orange-Poppy Seed Dressing

Combine first 5 ingredients in a blender; process until blended. Add poppy seeds; pulse once. Cover and refrigerate. Yield: 1 cup plus 1 T. (serving size: 1T.).
