Ingredients
- 1 Lg or 2 Sm butternut squash
- 1/4 C EVOO
- 3 cloves garlic, minced
- 2 Tbsp chopped fresh sage leaves
- Salt and freshly ground black pepper
Preparation
Step 1
Preheat oven to 375o, and line 2 baking sheets with parchment paper.
Peel, seed and dice squash into 1" cubes. Toss the cubes in a large bowl together with the remaining ingredients. Spread into a single layer on the baking sheet. Roast in oven until the squash is tender in the center and the outside is brown and crisp, about 25-30 minutes.
Remove squash from the oven, transfer to a serving bowl and serve.
