Black Bean Slaw - Carribbean

Ingredients

  • 15 oz can black beans - drained & rinsed
  • 12 oz dry broccoli slaw
  • 8 oz pineapple tidbites - not drained
  • 2 c. mango - chopped
  • Jicama
  • 1/3 c. plain yogurt
  • 2 tbsp rice vinegar
  • 2 tbsp Dijonnaise
  • 1/2 tbsp sugar
  • 2 drops coconut extract
  • 1/8 tsp chili powder
  • 1/8 tsp S&P

Preparation

Step 1

Combine all ingredients below yogurt

Mix with beans, slaw & fruit

Refrigerate at least 1 hour
