Chicken (Pineapple/Teriyaki)

Ingredients

  • 4 fresh pineapple rings cut up into chunks
  • 4 garlic cloves minced
  • 1 inch ginger peeled and chopped
  • 1/2 cup soy sauce
  • 4 Tbsp sherry
  • 1/2 cup brown sugar
  • 1/2 cup water
  • 4 tsp cornstarch
  • 2 tsp water
  • 4 chicken breasts (marinated in a little oil garlic and salt)

Preparation

Step 1

1. Place chicken breasts on a pan and bake for 20 minutes in a 400 degree oven. (make sure the chicken in thoroughly cooked)
2. In saucepan, mix all ingredients except for the fresh pineapple. Bring to a boil and then all the pineapple chunks. Make sure you stir frequently. Set aside and keep warm until ready to serve.
3. when chicken is done, place on plate and pour sauce over top.
