Fresh Ricotta

Ingredients

  • 3 cups organic WHOLE milk
  • 1 cup HEAVY cream
  • 1/2 tsp. kosher salt
  • 3 Tbsp. fresh lemon juice

Preparation

Step 1

Heat together first three ingredients to 190 degrees (use a thermometer to check the temp)
Very gently stir in lemon juice and remove from heat
Let stand 5 minutes
Pour into cheesecloth-lined strainer and allow to drain in refrigerator for at least 2 hours (up to 12).

Will keep 3 days in fridge.
