Lime in the coconut drumsticks

Ingredients

  • 3 crushed garlic cloves
  • 3 t chopped ginger
  • 1 c chopped scallions
  • 1 c cilantro
  • 1/4 tsp cayenne pepper
  • 1/3 c honey
  • 1 c coconut milk
  • 1/3 c lime juice
  • 1 tsp grated zest
  • 10 skin on drumsticks

Preparation

Step 1

1) in blender, combine all except chicken and puree.

2) cut 2 deeps slits in each drumstick; marinate in mix at least 1 hour.

3) transfer chicken to rack placed on a foil lined baking sheet; season. bake at 450 for 20 minutes; flip and bake until cooked through, about 10 minutes.
