Pumpkin Soup

Ingredients

  • 1 large onion - chopped
  • 1 1/2 lbs. carrots - chopped
  • 1/4 cup margarine (1/2 stick)
  • 7 cups chicken or vegetable soup
  • 1 can pumpkin puree
  • 1 bay leaf
  • 1/8 tsp nutmeg

Preparation

Step 1

Saute onions and carrots in margarine for 10 minutes.
Add stock, pumpkin puree, bay leaf and nutmeg.
Bring to a boil then reduce heat and simmer for 20 minutes.
Take out bay leaf.
Puree and season to taste with salt and pepper.
