Ingredients
- 1 lb. boneless, skinless chicken breasts, cut into chunks
- 2-3 Tbsp. olive oil
- 1 sm. onion, diced
- 1 green bell pepper, diced
- 1 c. sliced mushrooms
- 1/2 tsp. garlic powder or 1 clove fresh garlic, diced
- Salt & pepper, to taste
- 2 cans fat-free cream of mushroom soup
Preparation
Step 1
In a large skillet, saute chicken in 1-2 Tbsp. olive oil until cooked through. Remove chicken from skillet and keep warm on a plate in the oven. Add onion, pepper and mushrooms to skillet, and saute 6-7 min., or until softened (add 1 more Tbsp. olive oil, as needed). Add chicken back to skillet, and season the mixture with the garlic, salt & pepper. Stir in soup. Bring to a simmer over med. heat. Remove from heat & serve over whole-wheat pasta or brown rice.
