Italian Chickpea Soup

Ingredients

  • 5 cu veg stock
  • 2 cans chickpeas
  • 1 lg sweet potato 1/2 in cubes
  • 3 med carrots 1/2 in cubes
  • 1 med onion chopped
  • 1 stalk celery 1/2 in cubes
  • 1 tbs yellow mustard
  • 2 cloves garlic minced
  • 1 bay leaf
  • 1/2 tea dried thyme
  • 1/3 cup parsley chopped

Preparation

Step 1

4 qt saucepan combine stock chickpeas potato carrots onion celery mustard garlic bay leaf and thyme. Bring to boil. Reduce heat med low Cover simmer 10-15 min till vegs are tender. Stir in parsley serve
