Ingredients
- 1 c onion, chopped
- 6 T butter
- 8 1/2-oz pkg. cornbread mix
- 2 14 1/2 oz. cans chicken broth
- 1 14 1/2 0z cans creamed corn
- 1 c shredded cheddar cheese
- 2 c whipping cream
- Garnish: additional shredded cheddar cheese
Preparation
Step 1
In stockpot over medium heat, saute onion in butter. STir in dry cornbread mix. Stir in broth and corn until smooth. Fold in cheese; stir to melt. Just before serving, stir in cream; heat through but do not boil. Garnish with additional cheese.
