Mom's Banana Bread

Mom's banana bread brings make many memories for me and know making memories for my kids.

Ingredients

  • 1 3/4 cups sifted flour all purposed
  • 2 3/4 teaspoons baking powder
  • 1/2 teaspoons salt
  • 1/2 cup chopped nuts
  • 1/3 cup shortening
  • 2/3 cup sugar
  • 2 slightly beaten eggs
  • 1 cup mashed bananas (3-4) this works better if the bananas are real ripe to almost blacken ripe.

Preparation

Step 1

Turn oven to 350 degrees

Sift flour, baking powder and salt together se aside.
Blend shortening until creamy (300 strokes ) gradually add sugar, beating until fluffy after each addition, add eggs and beat until thick, add bananas alternately blending throughly after each one, then fold into mix nuts, or raisins or fruits.
Grease bottom only of 4 1/2 x 8 1/2 x 3 loaf pan.
Bake 60-70 minutes.

I have found that if I double this recipe I can get two great loaves of bread and usually 6 bananas will do the trick
