Pork Chops w/ Carmelized Onions

Ingredients

  • Olive Oil
  • Onion sliced thin
  • 2 tb Bourbon
  • 1 jar Roasted Red Bell Peppers, drained & chopped
  • 1 tsp Thyme
  • S&P
  • Pork Chops
  • 2/3 c Flour
  • 2 tb Butter
  • 1/2 c Chix broth

Preparation

Step 1

Heat Oil in skillet- medium
Saute onion 15 min.
Add Bourbon 5 min.
Remove from heat, add S&P set aside
Sprinkle chops with S&P, dredge in flour
Melt butter m-h
Cook chops 4 min each side
Place in greased baking dish
Cook chix broth in skillet 2 min, add to pork.
Add onions
Bake covered 25-30 min.
