Ingredients
- 6 lg baking potatoes
- (Aluminum foil)
- 2 c chopped broccoli
- 1 lemon
- (2 T butter, salt & pepper)
- 8 oz container of sour cream
- 3/4 c shredded jalapeño cheese
Preparation
Step 1
Preheat oven to 400º. Wrap potatoes individually in foil. Place in oven & bake until soft when poked w/ fork, about 1 hr. When done, remove from oven & cool.
Meanwhile, in med sauce pan with 2-3" of water add broccoli and bring to a boil. Steam until tender. Drain water & add juice of 1 lemon, butter, salt & pepper to taste. Slit potatoes lengthwise, scoop out insides & place into a lg bowl. Add salt, pepper & butter as desired to potatoes along w/ several T of sour cream & ½ c cheese. Mash w/ potato masher. Add broccoli &
stir. Re-stuff potato skins, topping each potato w/ remaining cheese. Place on baking sheet, bake for ½ hr at 350º.
