Puffy Pancakes

Ingredients

  • 3 eggs
  • 2 c. milk
  • 1 c. flour
  • 1/4 c. sugar
  • 2 Tbsp. vegetable oil
  • 1 tsp. salt

Preparation

Step 1

Heat oven to 450 degrees. Beat eggs well, add milk, flour, sugar, oil and salt. Blend until smooth. Pour batter into 2 non-stick or well greased 9" cake pans. Bake for 25 minutes then reduce oven temperature to 350 degrees and bake 5 minutes longer or until golden. Cut pancake into wedges and serve warm with fruit or syrup.
