Edamame Dip

Ingredients

  • ◦1 1/4 cup shelled, cooked edamame
  • ◦3/4 cup cannellini beans
  • ◦1 clove garlic
  • ◦zest of 1 lemon
  • ◦juice of 1 lemon
  • ◦1/8 teaspoon cayenne pepper
  • ◦1/4 cup loosely packed fresh parsley
  • ◦5 tablespoons extra virgin olive oil
  • ◦salt & pepper to taste

Instructions

1.Combine all ingredients except olive oil in a food processor.
2.Process until combined, scraping down the sides once.
3.With the processor running, drizzle in olive oil slowly.
4.Process until smooth.
5.Season with salt & pepper.
