Cranberry-Orange Muffins

Ingredients

  • 3/4 cup natural bran
  • 1 cup whole-wheat flour
  • 1/2 cup sugar
  • 1 1/2 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 cup cranberry sauce
  • 1 egg
  • 1/2 cup buttermilk or low-fat yogurt
  • 1/4 cup canola oil
  • 1 tsp grated orange rind

Preparation

Step 1

In a bowl combine bran,flour,sugar,cinnamon,baking powder and baking soda; mix well.
Add cranberry sauce,egg, buttermilk or yogurt,oil and orange rind.
Stir just until combined.
Spoon batter into paper-lined or nonstick muffin tins
Bake at 400 F for 25 min or until firm to the touch
