Steak with Lemon-Herb Pesto & Spinach Salad

Ingredients

  • 1/2 C Italian parsley
  • 1/2 cilantro
  • 3 T EVOO
  • 1/2 lemon rind
  • 5 t lemon juice, divided
  • 5/8 t salt, divided
  • 3/4 t ground pepper, divided
  • 5 cloves garlic, divided
  • Cooking spray
  • 1 lb flank steak, trimmed
  • 1 t Dijon mustard
  • 6 C baby spinach
  • 1/2 C sliced red onion

Preparation

Step 1

Combine parsley, cilantro, 2 T oil, lemon rind, 1 T lemon juice, 1/4 t salt, 1/4 t pepper & 4 garlic cloves in food processor; process until finely chopped
Heat grill pan over med-hi heat. Coat pan with cooking spray. Sprinkle steak with 1/4 t salt & 1/4 t pepper/ Grill 5 min on each side. Let stand 5 min. Thinly slice across the grain.

Mince remaining clove garlic, Combine with 1 T oil, 2 t lemon juice, Dijon mustard, salt & pepper in med bowl. Whisk. Add baby spinach and sliced red onion; toss gently to coat. Serve steak with salad & pesto
