Ingredients
- 3 or 4 skinless, boneless chicken breasts cut into cubes
- 1-medium onion
- 1-tsp minced garlic
- Salt & pepper to taste
- 48oz jar Great Northern White Beans
- 2 -cans of diced green chilies
- 1 -(14.5 oz) can diced tomatoes with garlic & onions
- 1-1/2 tsp cumin
- 1-1/2 tsp Cilantro
- 1-tsp chili powder
- 1-tsp red pepper
Preparation
Step 1
Cook chicken cubes, onion and garlic in olive oil. Cook until just slightly pink. Salt & pepper to taste. Add all other ingredients (juice and all) to crock pot, then add the cooked chicken.
Cook on low 4-6 hours.
