Velvet Corn Soup

Ingredients

  • 1 tbsp oil
  • 1/4 cup onions (chopped)
  • 2 can (14 oz) chicken stock
  • 1 can (17 oz) cream corn
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 2 egg whites (slightly beaten)
  • 2 tbsp cilantro
  • 1/4 tsp pepper
  • 1/4 cup ham (chopped) optional

Preparation

Step 1

Heat oil ad cook onion until tender. Add broth and corn and bring to a simmer. Cover.

Combine cornstarch and 2 tbsp cornstarch. Stir into soup and simmer a few minutes longer.

Remove from heat. Slowly stir in egg whites and then cilantro & pepper.

Immediately ladle into bowls and serve.
