Ingredients

  • Mix together:
  • 2 cups sugar
  • 2 cups flour
  • 4 eggs
  • 2 teaspoons cinnamon
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1 1/2 cups oil
  • Fold in:
  • 3 cups of grated carrots
  • 1 cup chopped pecans
  • 1/2 cup raisins
  • 1/2 cup coconut
  • Icing:
  • 1 stick butter
  • 3 ounces cream cheese
  • 1 box confectioners sugar

Preparation

Step 1

Bake 300 for 55 minutes, in a 9x13 pan.

Ice cake after cooled.
